Amazing german apple pancake! (gluten-free)

When apple pie and pancakes come together…

Every once in a while you eat something that jives so utterly and perfectly with the mood you’re in. With each bite, it feels as though the food stars have aligned, there is no other place you should be, there is no other food that your body could possibly desire instead.

Eating this pancake, I had one of those moments.

My goodness is this tasty…

Despite making an entire skillet, I ate the majority of it in one sitting.. oops!

What I LOVE so much about this pancake is how healthy and nourishing it is – not only gluten-free but actually grain-free as well, utilising coconut and tapioca flour. I tend to mostly cook grain-free, it’s just a preference I have but one thing I’ve noticed is that a lot of grain-free pancakes just don’t taste like the real thing. I still like them and eat them but sometimes you just miss that authentic fluffy pancake texture and taste.

Let me just say… this grain-free recipe is about the closest you will get to real pancakes (!!!)

apple pancake batter

German Apple Pancake in a cast iron skillet (gluten-free, grain-free)

Ingredients:

Apple part:

3 small apples or 2 large – sliced thinly in half circles. (optional: peel your apples for a smoother, softer taste)
1/4 tsp cinnamon
1/4 cup butter (or coconut oil)
2 tbsp coconut sugar or maple syrup

Batter part:

3 pastured eggs
3/4 – 1 cup coconut milk (or more depending on if the batter is too thick)
1 tbsp maple syrup (or sweetener of choice)
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
1/2 cup coconut flour (this can be a bit challenging to cook with.. I’ve found that it all depends on the brand you use & how fluffy/powdery it is. This brand I’ve had the best results with so far)
1/2 cup tapioca flour
1 tsp vanilla extract

Preheat oven to 375.

Slice your apples thinly in half circles. In a cast iron skillet, melt the apple ingredients (butter, coconut sugar, cinnamon). Add the apple slices and saute on a low flame until apples are semi-soft.

Set aside a handful of nice-looking apple slices on a plate to top your pancake with later. 🙂

Leave remaining apples in skillet.

In a large bowl, whisk together the batter ingredients. Check the consistency of the batter… it should be pourable. If not, whisk in a bit more coconut milk. (I used about 1 cup)

Even out your apple slices in the cast iron skillet and pour the batter right on top of them. Place your saved apple slices on top to form a cute design 🙂

Bake for 25 minutes or so, until the top is golden brown.

Let cool for several minutes before slicing. Serve with a drizzle of maple syrup, a dollop of yoghurt on top like I did, or another topping of your choice!
